10.00 – Martin Moses winner of Chef of the Year 2019. Martin has worked at Michelin Star Restaurants for more than ten years. His signature is high flavours with few ingredients, where every ingredient stands out in both taste and structure.
10.20 – What to put on your menu? Panel discussion with Fredrik Larsson & Lena Flaten about the possibilities & difficulties of working with game meat & small-scale suppliers in your restaurant.
11.00 – The Non-Alcoholic Alternative with Anna Ottosson. How to create a larger selection of alternatives and keep with the trends as the next generation is drinking less alcohol.
12.00 – Mingle lunch with the winners of Sweden’s Chef of the Year.
13.00 – Ingredients with Stefan Eriksson. Restauranteur, Sommelier, Author, Entrepreneur, and our eminent moderator for the day. With his passion for the industry he helps us to delve deep into the current topics and issues.
14.00-15.00 – Drinks & Cocktails. We end the day by tasting the latest trends with Åre Gastronomy’s own Bar – mascot Emil Åreng, bartenders Karl & Alex from Mister French, Linus & Joakim from the Lobby Bar at Åregården and Samuel from Werséns.
Industry Day costs 200 SEK / person (including lunch). Participating companies in Åre Gastronomy have 4 free seats for Industry Day.
